Fudge Cupcakes

My sister in law says that she likes when I write funny posts. Heather likes recipes.


Heather, today is your lucky day,





Fudge Cupcakes
4 squares unsweetened chocolate
1/4 cup white sugar
1/2 cup raspberry pancake syrup
1 2/3 cup flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 1/2 cup sugar
3 eggs
1/3 cup milk


melt the 4 squares chocolate, 1/4 cup sugar and raspberry syrup in a glass bowl in the microwave.

in a medium bowl combine the flour, salt, and baking soda.

in your mixer bowl cream the butter and the 1 1/2 cup sugar for 3 minutes. Add eggs one at a time.

Add the flour mixture and the milk alternately ending with the milk.

Add the cooled chocolate mixture. Mix well and let set 5 minutes. Mix again after 5 minutes.

Fill muffin cups halfway and bake in 350 degree oven for 20 to 25 minutes. These need to NOT be over baked. Trust me, I am trying to save you from cupcake sadness. I would probably just bake them 20 minutes. They can look a little wet in the center, still. They will kind of fall in the middle. This is a good thing. Then they hold more frosting.

Frosting
1 bag semi sweet chocolate chips
1 can sweetened condensed milk

cook in top of double boiler until smooth and shiny and spreadable. Takes about 5 minutes.
