This is actually inspired by April and her apple processing factory....
Apple Orchard Bars
1/2 cup melted butter
1/2 cup white sugar
1 cup brown sugar
1/2 tsp salt
1/2 tsp soda
1/2 tsp baking powder
2 tsp vanilla
1 tsp cinnamon
2 eggs
1/2 cups oats
1 cup peeled, chopped apple
2 cups coconut
1 1/2 cup flour
Mix first 3 and then add next six. Then mix in oats and apples and 1 1/2 cup of coconut. Mix well and add flour. I know, it's weird!
Spread into a greased 9 by 13 and sprinkle remaining 1/2 cup of coconut on top. Bake 25 minutes in a 375 degree oven.
I use Gala apples in this recipe and I decrease the cinnamon because I think cinnamon is Satan's spice.
I also like to under bake these in a big way. It is like apple crisp you can eat without a spoon. Yum Yum!
I just made a pan of these to take with us to eat while we are watching Nim's Island on a giant inflatable screen at the elementary school.
I have NO IDEA what Nim's Island is.

Yum! This looks good. I'll make it for a snack for my kids this week.
A couple nights ago we had omlettes and apple/cherry crisp for dinner. My kids were very confused......I told them to get used to it, we were probably going to be eating apples at dinner A LOT!
I'm such a wimp. I can't try anything unless I visually see it first.
