Southern Staple

Today I wanted to be southern.
At least I wanted to make a very southern food.



Pimento Cheese.
Do you make it? This is what I did. I took about a pound of shredded cheddar and mixed in a handful of shredded jack. Then I added about a tablespoon of minced garlic and a 4 ounce jar of pimentos. I smooshed it all up in the food processor and then added a large spoonful of mayo.
I tasted it and decided that it needed salt so I shook some Kosher salt on top.
And then I ate way too much of it on crackers. It was very tasty. I saw some very strange recipes online before I decided to just mix together what sounded good.
I would be curious to see anyone elses recipe.... Adrian should be a hand model, dontcha think????

very good, but no one likes pimento cheese in this house. i just made that dinner and improvised a lot! but it was good. I will blog it later.

I never liked it til my husband made it himself. He uses jalapenos, too!

I make mine like this:

1 brick of Tilamook Extra Sharp Cheddar Cheese Shredded
1/2 small red onion finely diced
1 4 0z jar pimentos
1 tsp minced garlic
1 tsp kosher salt
1 tsp white pepper
1 cup of Hellmans Mayonaisse

Mix all these ingredients together. Put in a sealed bowl inside of a brown paper bag. Place in the back of the refrigerator with a Hazardous Waste sticker on it. That is the only way you will be able to have enought to eat for yourself. Otherwise my family will find out you have "Minner Cheese" in your refrigerator and it will be raided. Oh and make sure to serve it on fresh baked Squaw Bread.
