white chile

Here is another really funky colored Verizon uploaded picture. It is of white chili. I made it tonight for dinner. The last time I can remember making it was when Adrian used to work for Bridgestone and we used to go and eat lunch with him at the Union Hall. It was before Lucy and Rachel had started school, so 10 years ago. I wonder why I have waited so long to make it again. It is wonderful. Rosanne gave me the recipe. White Chile

in a Dutch oven, saute:

1 T oil
1 Cup onion, diced
4 cloves garlic, diced
2 tsp. cumin
1 1/2 tsp oregano
1/4 tsp. red pepper flakes

once the onion and garlic are soft add:

3 or 4 cans Great Northern beans
2 cans chicken broth

cook 10 minutes.

then add 2 cooked and shredded chicken breasts and 2 cups shredded Monterrey Jack cheese.

cook and stir until cheese is melted.

serve with sour cream, tortilla chips, and whatever else floats your boat!

OH that is almost exactly the same recipe I have, with the cumin and oregano! Mine has you saute the onions, garlic and a can of chopped green chili's. Then you add that to beans and broth. I put way more chicken in though.
